That Spirited Lot Distillers is a family-owned craft distillery based in Seaford, Victoria, founded by siblings Jon-Paul and Chris Willigenburg, along with sisters Kate Barton and Sarah Barton. What began as a shared dream between family members has grown into a vibrant, award-winning distillery known for its bold flavours, sustainable ethos, and deep community roots.
The team produces premium gins, vodkas, and mixers using locally sourced botanicals and fruits, often collaborating with nearby growers and producers to showcase the best of the Mornington Peninsula. Every bottle is distilled, bottled, and labelled on-site with care and creativity.
Sustainability is central to their mission—from repurposing spent botanicals into garnishes and syrups, to using recycled, compostable packaging and powering their operation from solar energy. That Spirited Lot is more than a distillery—it’s a celebration of people, place, and purpose, with every drop telling a story of family, flavour, and fun.

5 things you didn't know about That Spirited Lot.
1. 100% recyclable packaging. Our bottles are made from recycled glass and our corks are made from a sustainably farmed material.
2. Our Seaford distillery and manufacturing runs entirely on solar power. A large solar panel grid consisting of 43 panels adorns the rooftop of our facility which generates on average 85kWh a day. To date, we’ve saved 21.7 tonnes of CO2 – equivalent to planting 558 trees or not driving 87,000 km.
3. Our Peninsula BLVD. syrups were developed to use up leftover botanical ingredients from the spirit making process reducing organic waste.
4. We strive to source and prepare our spirits from local and organically grown ingredients. For instance, some of our spirits are manufactured using grape waste products from the Yarra Valley, Mornington Peninsula and South Australian wine industries.
5. We also have established waste recycling practices, with our water, grain and organic waste all taken to be recycled by the local farming industry to support livestock and agriculture.
