We’re excited to announce the release of our 2025 Vintage on the Ninch Pinot-Soaked Gin – a bold expression of craft and patience. This year’s edition comes with a little extra punch, sitting at 45% ABV, delivering a richer, more complex profile for gin lovers who appreciate depth and character.

For 2025, we made the deliberate decision to hold back the release, allowing the spirit to rest for an additional four to five months. This extended maturation has worked wonders, enhancing the mouthfeel and elevating the overall balance of the gin. The result is a silky texture and a harmonious integration of botanicals with the subtle fruit notes imparted by the Pinot-soaked process.

Expect vibrant layers of juniper and citrus intertwined with delicate berry tones and a whisper of spice, all rounded out by the influence of premium Mornington Peninsula Pinot Noir skins. It’s a gin that speaks of place, time, and craftsmanship – perfect for sipping neat, over ice, or as the hero in your favourite cocktail.
