At That Spirited Lot Distillers, every drop of our Single Malt Whisky is guided by the same philosophy embodied in the revered koi fish—resilience, dedication, and the journey toward excellence. In Japanese tradition, koi are known for swimming upstream, overcoming obstacles, and transforming into dragons. Their story mirrors our own unwavering pursuit of character, purity, and depth in every spirit we create.

Distilled slowly in small batches, our whisky begins its life with carefully selected malted barley, fermented long and cool to coax out layers of natural sweetness. We distil on-site with deliberate precision, capturing only the purest heart of the spirit—rich, velvety, and full of promise. The whisky then rests in hand‑picked barrels, where time, wood, and the coastal rhythms of Seaford quietly shape it into something remarkable.

The result is a Single Malt that celebrates craftsmanship and transformation: notes of toasted malt, warm oak, citrus peel, and gentle spice flow together with the same harmony and balance found in traditional koi art. Each sip is a reminder that great whisky, like the koi’s journey upstream, is forged through persistence, care, and a spirited commitment to quality.
